The 25°F / 20% rule is a reliable starting formula, but getting great results also depends on a few habits that seasoned air fryer cooks develop quickly.

  • Don't overcrowd the basket — air fryers work by circulating air around every surface of the food. A single layer with space between pieces gives far better results than a packed basket, which essentially steams the food instead of crisping it.
  • Check 5 minutes early for frozen foods — frozen items often cook faster than the formula predicts because there is no residual cold oven air to contend with. Start checking 5 minutes before the converted time.
  • Use a thermometer for thick cuts — for whole chicken, thick pork roasts, or anything over 2 inches thick, use the 15% time reduction rather than 20%, and always verify internal temperature with an instant-read thermometer.
  • Shake or flip halfway — for fries, nuggets, shrimp, or any smaller items, shaking the basket or flipping pieces halfway through ensures even browning on all sides.
  • Lightly oil the food, not the basket — a light spray or brush of oil on the food itself promotes browning; oiling the basket can cause smoking. For very lean proteins like fish, a thin coat of oil prevents sticking and aids crisping.

Very delicate items (soufflés, custards, chiffon cakes) are generally not suitable for air fryer cooking, as the forceful airflow can disrupt structure. Wet batters (tempura, beer batter) drip and create smoke without a specialized air fryer rack.
