Grams and ounces both measure mass (weight). The conversion between them is exact and fixed — no ingredient information needed. One avoirdupois ounce is defined as exactly 28.349523125 grams by NIST. Divide any gram amount by that constant and you have the equivalent in ounces. Multiply ounces by the same constant to go the other way.

Worked example: dark chocolate for ganache

Example: 200 g of dark chocolate, recipe in ounces

A European ganache recipe calls for 200 g of dark chocolate. The cook is buying chocolate in a US shop where bars are labelled in ounces and wants to know how many to buy.

Step 1 — Divide by 28.3495

oz = 200 g ÷ 28.3495
oz = 7.054 → 7.05 oz

Step 2 — Match to available packaging

Most US dark chocolate bars are 3.5 oz (99 g) or 4 oz (113 g). Two 3.5 oz bars total 7 oz (198 g) — just 2 g short of the target. Two 4 oz bars (227 g) are 27 g over. The cook picks two 3.5 oz bars and nibbles the 2 g difference.

Tips for grams-to-ounces conversions in the kitchen

This is a pure arithmetic conversion — the only variable is making sure you are using the right ounce definition and reading your scale correctly.

  • Never confuse avoirdupois and troy ounces — cooking always uses the avoirdupois ounce (28.35 g). Troy ounces (31.10 g) appear on gold and silver. A recipe that says "oz" always means avoirdupois.
  • 28 g ≈ 1 oz is the quick-kitchen approximation — accurate to within 1.3%, fine for savoury cooking. For baking, use 28.35 g or let the calculator do it.
  • Set your scale to grams for baking — gram readings are more granular than ounces on most kitchen scales (0.1 g vs 0.05 oz), so measuring in grams and converting is more precise than reading ounces directly from the scale.
  • 1000 g = 35.27 oz ≈ 2 lb 3.3 oz — when a recipe crosses into kilograms, knowing the pound-and-ounce breakdown helps when shopping from weight-labelled packaging.
  • For very small amounts (under 10 g), use milligrams — at pinch-of-spice quantities, the imprecision of a kitchen scale in ounces is larger than the ingredient itself. Weigh in grams and multiply by 1000 to get milligrams if needed.

The limiting factor is always your scale. Consumer kitchen scales typically have a resolution of 1 g or 0.1 g, and an accuracy of ±1–2 g. For culinary purposes this is more than adequate. For pharmaceutical, laboratory or fine chemical work, use a calibrated analytical balance, not a kitchen scale.
