How the grams to tablespoons converter works

A tablespoon is a volume measurement, not a weight — it holds a fixed amount of space regardless of what you put in it. Because different ingredients pack that space more or less densely, there is no single conversion factor from grams to tablespoons. You need to know the ingredient's density first. The calculator stores density-per-tablespoon values for common ingredients so it can do the division for you.

Worked example: measuring butter without a scale

Example: a recipe calls for 85 g of unsalted butter

Tom is making a pan sauce that needs 85 g of unsalted butter but his scale battery died. His only measuring tool is a tablespoon. He needs to know how many tablespoons to use. Butter density is 14.2 g per tablespoon.

= 5.99 tbsp ≈ 6 tablespoons

Practical tips

Tips for accurate tablespoon measurements

Volume measurements introduce more error than weight measurements, but there are techniques that pull them reliably close to the recipe's intended gram weight.

  • Level the spoon with a straight edge — a heaped tablespoon of flour can weigh 25–30% more than a levelled one. Drag a knife or ruler across the top to get the density the table assumes.
  • Spoon flour into the tablespoon, don't scoop — scooping compacts flour and raises its effective density above 7.8 g/tbsp. Spoon it loosely in and then level off for consistent results.
  • Use a liquid measure for honey and oil — sticky liquids cling to the spoon and are hard to level. A small liquid measuring cup (or the calculator's mL output) is more accurate for viscous ingredients.
  • Soft vs. melted butter behave differently — 14.2 g/tbsp applies to soft (room-temperature) butter packed level. Melted butter is denser and slightly easier to measure accurately; clarified butter sits closer to oil.
  • Salt type changes everything — table salt is 17.1 g/tbsp, but kosher salt (Diamond Crystal) is roughly 8 g/tbsp and Morton kosher is about 14 g/tbsp. Always verify which salt a recipe targets before converting.

The density values stored in this calculator are averages drawn from published food composition databases and baking-school measurement guides. Real ingredient density can vary: flour's density shifts with humidity and how the bag was stored; butter density changes with temperature; honey density varies by floral source and water content. Expect the tablespoon result to be accurate to within ±5–10% for most cooking purposes.

For baking — where ingredient ratios matter more than in most cooking — weigh your ingredients if you have a scale. Volume measurements are a useful fallback, not a first choice. This converter is most reliable for water, oil, and other liquids whose density is nearly constant, and least reliable for airy dry goods like flour and baking powder, which compact easily.
